Curious question, one that doesn't show up on forums much.  Probably the top five uses for these vehicles, in no particular order, are hunting, recreational riding in sand dunes, racing, mudding, and farming.  What has made them so popular in the last decade is people buy one, and unlike most other recreational toys, find new uses for them that they had never even considered before.  I spend a fair amount of time in a retirement community where the residents can drive golf carts on all the streets and UTVs are quickly replacing their much less durable carts.  Do plenty of research and test drives before you buy one, but there's enough to choose from out there that you will find one that you'll be happy with.
Actually read an article about this topic a while back, check it out out here:

There's a company called Submarine Snorkel that makes these kits, I added one to my RZR-S, they work great.  The company doesn't guarantee to protect the engine against flooding if your underwater, but a little silicone where the sections of the pipe meets should keep any water out.  Got mine here:

Has to be the steering rack, unfortunately you'll have to replace the whole thing because no one makes just parts for the steering rack.  I would highly recommend power steering, the decreased steering effort may help you avoid any "tree incidents" in the future.

Warn makes an incredibly strong plow, I wouldn't suggest that the tube ratio is going to affect strength.  The reason a 2500 lb winch is necessary is anything rated below this weight rating is going to be too weak to provide the kind of strength that an accessory like a plow puts on it.  Hope this helps.

Has he replaced the sheave?  A lot of times if this part is worn it will spin without getting enough traction and your speed will be limited. Also, the clutch should be thoroughly greased with something like Yama Lube.
